Garlic Broccoli Penne Rigate with Lemon Crumbs


A green, garlicky penne that feels fresh without being fussy. The broccoli softens into the ridges, the lemon crumbs add crunch, and dinner stays comfortably inside 30 minutes.
Ingredients
- 400 g Cibo di Italia Penne Rigate
- 500 g broccoli — florets and tender stems chopped small
- 5 tbsp olive oil
- 4 pieces garlic cloves — thinly sliced
- 1/2 tsp chilli flakes — optional
- 1 piece lemon — zest and 1 tbsp juice
- 60 g fresh breadcrumbs
- 40 g parmesan — finely grated
- to taste salt and black pepper

Step 1. Bring a large pot of salted water to the boil. Add the penne and cook for 5 minutes.

Step 2. Add the broccoli to the same pot and continue cooking for 4 minutes, until the penne is al dente and the broccoli is tender.

Step 3. Meanwhile, heat 2 tbsp olive oil in a small pan. Add the breadcrumbs and lemon zest, then toast for 3 minutes until golden. Season and set aside.

Step 4. Warm the remaining olive oil in a wide pan. Add the garlic and chilli flakes; cook gently for 1 minute without browning.

Step 5. Reserve a mug of pasta water. Drain the penne and broccoli, then add them to the garlic oil.

Step 6. Toss with parmesan, lemon juice and enough pasta water to make a light glossy sauce.
