Lemon Chicken Whole Wheat Fusilli


A bright chicken pasta with a deeper whole wheat bite. The sauce is light but satisfying: lemon, garlic, a little yoghurt and enough pasta water to coat every twist.
Ingredients
- 400 g Cibo di Italia Whole Wheat Fusilli
- 400 g chicken breast — thinly sliced
- 3 tbsp olive oil
- 3 pieces garlic cloves — finely grated
- 1 piece lemon — zest and 2 tbsp juice
- 120 g Greek yoghurt
- 80 g baby spinach
- 30 g parmesan — finely grated
- 1 piece small handful parsley — chopped
- to taste salt and black pepper
Method

Step 1. Cook the whole wheat fusilli in salted boiling water for 10 minutes, reserving a mug of pasta water before draining.

Step 2. Season the chicken. Heat 2 tbsp olive oil in a wide pan and cook the chicken for 5 minutes until golden and cooked through.

Step 3. Lower the heat. Add the garlic and lemon zest to the pan and cook for 30 seconds.

Step 4. Stir the yoghurt with lemon juice, parmesan and 4 tbsp pasta water in a bowl.

Step 5. Add the fusilli and spinach to the chicken pan. Toss until the spinach wilts.

Step 6. Remove from the heat and fold through the yoghurt sauce, loosening with more pasta water until glossy.

Step 7. Finish with parsley, black pepper and the remaining olive oil.

Yes. Add shredded cooked chicken with the spinach and warm it through before folding in the yoghurt sauce.

Take the pan off the heat before adding yoghurt, then loosen it with warm pasta water instead of boiling it.
